What it is: It is the oil that comes from the fruits of the olive tree. Olive oil contains high levels of monounsaturated fatty acids (MUFA) as well as a plethora of bioactive components. For the most part, olive oil consists of omega-9 monounsaturated fatty acids.

How it works: The monounsaturated fatty acids of olive oil seem to relate to protection against the risk of cardiovascular disease. Its contribution to nutrition programs for “good heart health” is its high content of antioxidant polyphenols and its capacity to compete with the omega-6 fatty acids without having negative effect on omega-3 fatty acids. Moreover, its phenolic components have exhibited anti-inflammatory and chemoprotective properties.
